Anthocyanin
A flavonoid that is a glycoside derivative of anthocyanidin. They are water-soluble plant pigments that exhibit bright coloration. Their color is dependent on the pH of the solvent; therefore, these polyphenols are used as pH indicators. (NCI Thesaurus)
