Carrot, Chia and Hemp Seed Tots
Ingredients:
• 2 cups grated carrots
• 1/4 cup chia seeds
• 1/4 cup hemp seeds
• 1/4 cup breadcrumbs
• 1/4 cup grated Parmesan cheese
• 1 egg, beaten
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/2 teaspoon paprika
• 1/4 teaspoon cayenne pepper (adjust to taste for spiciness)
• Salt and pepper to taste
• Cooking spray or oil for greasing
Instructions:
• Preheat your oven to 375°F (190°C). Grease a baking sheet with cooking spray or oil.
• In a bowl, combine the grated carrots, chia seeds, hemp seeds, breadcrumbs, Parmesan cheese, beaten egg, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well until everything is evenly combined.
• Take small portions of the mixture and shape them into tots, pressing firmly to ensure they hold together. Place each tot on the greased baking sheet, leaving a little space between each one.
• Once all the tots are formed, lightly spray the tops with cooking spray or brush them with a little oil. This will help them crisp up in the oven.
• Bake the tots in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the outside, flipping them halfway through the baking time for even cooking.
• Once the tots are done, remove them from the oven and let them cool for a few minutes before serving.
