    Mushroom and Lentil Soup



    Ingredients

    • 1 cup lentils, rinsed and drained
    • 1 cup sliced mushrooms (your choice)
    • 1 onion, chopped
    • 2 carrots, diced
    • 2 celery stalks, diced
    • 3 cloves garlic, minced
    • 6 cups vegetable or chicken broth
    • 1 teaspoon dried thyme
    • Salt and pepper to taste
    • Olive oil for cooking

    Instructions

    • In a large pot, heat some olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté until the vegetables are softened.

    • Add the sliced mushrooms and continue to cook for a few more minutes until they start to release their moisture.

    • Pour in the lentils, vegetable or chicken broth, and thyme. Season with salt and pepper.

    • Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for about 25-30 minutes, or until the lentils are tender.

    • Taste and adjust the seasoning as needed.


    Serve the mushroom and lentil soup hot, garnished with fresh parsley or a drizzle of olive oil.
